Here’s one of my go to recipes for an easy (and healthy) version of
Garlic Shrimp Scampi
1 pound shrimp, tails-on, uncooked
2 Tbsp. extra-virgin olive oil
6 cloves garlic, finely minced
1/2 C. fresh parsley, minced
Juice of one lemon (about 2 Tbsp.)
1/2 tsp. crushed red pepper flakes (less if desired)
Salt and pepper to taste
Combine all ingredients and throw in a zip-lock bag. Allow to marinate for about an hour. Preheat oven to 350 degrees. Bake shrimp until done, approximately ten minutes. Be careful not to overcook. A simple tip to remember, is when properly cooked, shrimp is slightly opaque and a little “white” in color and the tails are pinkish/red.
**Serve over pasta if desired…but don’t forget to control those portions. It’s great over zoodles, too! (spiraled zucchini noodles)
